Karen Elizabeth (Stober) Scott passed away unexpectedly on Thursday, February 19th, 2026. A funeral service will be held Tuesday, February 24, 2026 at 11:00 a.m. at Central Baptist Church. Visitation will be from 9:00 a.m. until the time of the service at church. Burial will be at Graceland Park Cemetery. Arrangements are under the direction of Waterbury Funeral Service of Sioux City.
Karen was born in Wahoo, Nebraska on April 21st, 1951 to Earl and Elaine Stober (Shadonix). She attended Central High School in Omaha, Nebraska. Karen was married to her cherished husband Bob on May 22, 1976.
Every person who came across Karen knew her greatest attribute was her love of putting others before herself. Karen spent her working days as a stay-at-home mom and daycare provider. Everyone who knew Karen quickly recognized that her greatest gift was her selfless heart. She lived each day placing the needs of others before her own, serving her family and those around her with quiet strength and unwavering love thus earning herself the nickname Care Bear. Karen’s love of caring for people overflowed into her church ministry as she faithfully served in the church, World Changer meal ministry, and countless other church events. To her husband she was his biggest supporter, campaign approver, and devoted wife. To her children she was their best friend, daily phone call check-in, lunch provider, counselor, and biggest fan. Karen’s greatest light and joy this side of heaven were her grandchildren. To her grandchildren, Grandma Karen was a foundational piece of their lives, bringer of Chick-Fil-A, biggest cheerleader, most spirited holiday planner, and best friend. Her legacy will live on in the memories she made and the love and joy she poured into her family.
Left to cherish her memory are her beloved husband of 49 years, Bob Scott. Five children Andy Scott of Sioux City, IA, Matt Scott (Laura) of Sioux CIty, IA, Jesse Scott (Patrice) of Omaha, NE, Sarah Boesch (Chris) of Sioux City, IA, and Katie Harris (Stevie) of Sioux City, IA. Twelve grandchildren: Ikey, Abe, and Nora Mae Scott, Faith, Lincoln, Lucy, and Finnley Boesch, Bennett and Campbell Scott, Tucker and Elsie Trimble, and a new granddaughter to arrive in August. Her mother, Elaine Stober, sister Janice Stober, brothers Jim and John Stober as well as many nieces and nephews. Several children and grandchildren that she took into her home and shared her joy and the love of the Lord and many daycare children and families that she took in as her own and loved so well. Preceding her in death is her father, Earl Stober.
Karen’s life was a testimony to love, faith, and selfless devotion. While she will be deeply missed, we take comfort in knowing she has heard the words, “Well done, good and faithful servant,” and now rests in the presence of her Savior.
In lieu of flowers, memorials may be made to the family for donation to Bishop Heelan Catholic School and Siouxland Christian School in honor of her grandchildren.
